St.Moritz's Magical bread
(This recipe makes 4 loafs) These are the ingredients of St.Moritz's Bread: 7 cups of gluten free bread flour 5 cups of rye flour 1 cup of hazelnut flour 1 cup of pine nuts 1 cup of hazelnuts or walnuts 1/2 cup of pumpkin seeds 2 1/2 teaspoons of yeast 2 cups of buttermilk 3 cups of warm water 3 teaspoons of anise seeds 1/3 cup agave nectar 2 teaspoons of salt Instructions: Mix all dry ingredients before adding the wet ingredients. Mix and knead everything well. Divide into 4 loafs and let it sit for two hours, lightly covered with a kitchen towel at room temperature. After two hours knead each loaf again and place on oiled baking sheet and allow it to rise for 20 minutes before baking. Gently cover each loaf with a very thin layer of oil and egg yolk. Bake at 425 degrees with a tray full of water underneath the loafs. Oven needs to be set at 425 conv. bake to insure moist moving air while baking.
